  1. Toast the stale bread. Lightly crush the garlic clove and rub the lovely oils over the toast.
  2. Layer the toast in a deep saucepan or casserole dish and cover with the stock and passata. Put on the hob over a gentle heat and cook for 45 minutes until thick and the bread has absorbed most of the liquid. Season with salt, pepper and extra virgin olive oil, and scatter over basil leaves.
