  1. Get the meat out of the fridge at least 30 minutes before cooking. Preheat the oven to 240C or as high as it will go.
  2. Combine the baste ingredients with a large pinch of sea salt and enough olive oil to make a spreadable paste. Baste the meat generously, transfer to a baking tray and roast as per the instructions above.
  3. Allow to rest for at least 30 minutes before carving and serving.
